How Do I Make Hard Cider From Home?
Lately I have been researching how to make hard cider, and I have decided to try it out. I guess what I was thinking of trying was this
Ingredients:
1 gallon water
1 gallon cider
1 cup sugar/honey
1 teaspoon cinnamon
1 pkg yeast
Procedure:
Pour cider into 2 liter bottle
Mix in sugar and cinnamon
Place rubber tubing going out of the bottle (making sure that that end is airtight), going into a glass of water to let gas out.
Leave 3-7 days
Strain out yeast and bottle to drink

My questions are:
Are the ingredients right? should I add or take anything away?
Do I ABSOLUTELY have to to use unpasteurized cider? If so is there any way around it?
I read that this makes about a 15 proof alcohol, Is there any way to raise the alcohol level higher to somewhere around 80 proof? (by fermenting further or freezing etc.)

You talk about using 1 gallon of water and 1 gallon of cider...and you're planning in fitting all 2 gallons into a 2 liter bottle?
Seriously, though, if you want the strongest cider you can make, leave out the water. You can use pasteurized cider all you want, just be absolutely sure it has no preservatives (sodium benzoate or potassium sorbate).
Second, it's going to take much longer than 3-7 days. 3-7 weeks is more like it (closer to 7) if you've added honey. It will raise the alcohol, but cause the fermentation to take nearly twice as long. It will taste better though.
You're not going to strain out any yeast...it's way too small to be caught by a strainer or even a coffee filter. The best thing to do is to let it sit long enough to where the yeast is done doing its thing and it eventually settles to the bottom. If you have any patience at all, it will be well worth it...as well as crystal clear.
Also, take your "research" outside of yahoo answers...most here are wrong. You don't even have to take my word for it, contact some home brewing stores for info.
